Squash (or Pumpkin) Soup

As requested by Olive, here is my squash (or pumpkin) soup that my girls just love. Even Alyssa smacks her lips everytime she eats this. :-)
  1. Peel and cut up the squash into cubes.
  2. Put the squash in a cooking pot and fill with water just enough to cover it. Add a beef or pork cube. Boil til squash is really soft.
  3. Place boiled squash including the soup in a blender and puree.
  4. Add milk and season with salt and pepper to your taste. You can also add all-purpose cream.
  5. Top with crispy bacon bits.

  4. I have almost the same recipe except that I use chicken cubes. It's a great base recipe. Sometimes, I combine carrots and squash. This recipe also works with fresh mushrooms or potatoes. Add a little white wine for a more sophisticated flavor.

  5. Thanks for the ideas, Maan. Will try adding carrots or mushrooms or potatoes one of these days. :-) I prefer beef or pork cubes over chicken because I find these more flavorful.

  6. i love pumpkin/squash soup! a pinch of cumin, nutmeg or curry makes this soup more "adult" :-)

  7. Hmmm... Sounds yummy, Chinks! Will try it nga. But I'm not sure if my girls would like the "different" flavor. Right now, they just love the soup. I'll have to separate another batch for just Mier and me. :-)
